Characterized by the clean acidity and rich sweetness distinctive of Panamanian coffee. It offers a gentle yet full-bodied sweetness reminiscent of brown sugar or honey. It features a mild bitterness and a pleasant aftertaste where the sweetness lingers.
<About the Beans>
The rich sweetness is complemented by bright acidity. creating a juicy profile. While a light roast may reveal slight vegetal notes typical of the Panama terroir. applying a bit more heat brings out sugar-like sweetness and nutty characteristics. The Boquete district is one of Panama's premier coffee-growing regions—frequently dominating top rankings in competitions like the Cup of Excellence (COE)—and Bajo Mono is a relatively new estate within the area.
Although Bajo Mono is a newer estate in Boquete. it is blessed with a unique microclimate created by the volcanic soil of the Barú Volcano and the "Bajareque" (mist) formed by moist winds from both the Caribbean Sea and the Pacific Ocean.
