The coffee boasts a rich. sweet aroma reminiscent of strawberries and raspberries. characteristic of natural processing. Upon sip. a concentrated berry flavor. like jam. spreads. followed by a bright. transparent acidity of peach and apricot. creating a complex layering of notes. The firm beans. grown at high altitudes. produce a rich. full-bodied flavor reminiscent of red wine. and the aftertaste lingers smoothly. with a sweet finish reminiscent of cocoa and milk chocolate.
* Light Roast: A vibrant aroma reminiscent of strawberries and ripe berries. along with a bright. transparent acidity like champagne. fills the mouth.
* Medium Roast: The rich sweetness of berries is complemented by a chocolate-like depth. resulting in a thick. mellow mouthfeel and a long. lingering finish.
<About the Beans>
From 2000 to 2004. a series of large wildfires occurred in the village of Shakiso. After the fires were extinguished. only a small amount of forest and vast tracts of land remained. To protect this remaining forest. the farm owner. Tesfaye. purchased 5 hectares of land and began coffee production by planting and cultivating coffee and shade trees himself. In Ethiopia. G1-G2 coffees are typically processed using the "washed" method. while G3 and above are processed using the "natural" method. Natural coffee. especially those rated "G3 and above." often contains a relatively high proportion of defective beans. resulting in a somewhat cloudy flavor. However. this "Sidamo G1 Tade GG Farm Natural" is produced using a different process than usual. resulting in a "G1" "Natural (dry-processed)" coffee with an incredibly clean taste. unlike typical natural coffees. It also offers the excellent acidity characteristic of Mocha. making it a truly appealing product.
