This coffee offers a complex flavor profile characterized by intense sweetness and fruity acidity reminiscent of juicy blood orange and ripe plum. With every sip. a rich. high-quality body—distinctive of the "Black Honey" process—unfolds alongside a pleasant. cacao-like finish derived from the high ripeness of the cherries.
<About the Beans>
The coffee is slowly dried on raised African beds; the process is named "Black Honey" because the parchment takes on a honey-like hue during drying.
This method draws out a long-lasting sweet finish. a syrupy. full body. and complex. concentrated fruit flavors.
Only fully ripe cherries are selectively harvested. and the pulp is removed via machine. Instead of completely washing away the mucilage. the parchment is dried with a significant layer of the viscous. sugary substance left intact.

Pulped Natural / Honey Process
Process: Before drying. the fruit pulp is removed using a machine (pulper). However. the slimy. mucilaginous layer surrounding the seed is intentionally left on during drying.
Concept: Imagine removing the outer pulp but drying the bean while it is still coated in the sweet. sticky mucilage. *The name changes to "Black Honey" depending on the amount of mucilage left behind and the drying method (collectively known as the Honey Process).
