??Daiginjo Method??
Similar to Daiginjo sake. this method involves carefully washing and polishing the surface of the coffee beans to remove impurities (silver skin and outer shell) that cause off-flavors.

– The beans will have a glossy finish after roasting.
– The bitterness will be reduced. and the acidity will be milder.
– The earthy and burlap sack smell will be eliminated.

Sidamo coffee beans are characterized by a rich aroma reminiscent of tea and flowers. often called "mocha flavor." and a fruity. gentle acidity. The "Daiginjo Coffee" processing removes off-flavors from defective beans. resulting in a cleaner and clearer taste. It features a distinctive floral and richly sweet aroma. The fragrance that rises during brewing is often compared to black tea or jasmine. A refreshing and lively fruity acidity dominates. with hints of citrus and berry (such as strawberry). A gentle sweetness reminiscent of brown sugar or caramel. combined with the acidity. creates a complex flavor.

Ethiopian coffee beans are graded according to the number of defective beans. G-4 beans have more defective beans than G-1 or G-2. but this is due to the Ethiopian natural processing method (dry processing) and does not indicate lower quality.
