??Daiginjo Method??
Similar to Daiginjo sake. this method involves carefully washing and polishing the surface of the coffee beans to remove impurities (silver skin and outer shell) that cause off-flavors.
– The beans will have a glossy finish after roasting.
– The bitterness will be reduced. and the acidity will be milder.
– Earthy and burlap sack smells will be eliminated.

Guatemalan coffee beans are graded according to the altitude at which they are grown; higher altitudes indicate higher quality. Beans grown at higher altitudes tend to have richer acidity and body. resulting in a higher-quality coffee. The highest quality grades include SHB (Strictly Hard Bean). HB (Hard Bean). SH (Semi-Hard Bean). EPW (Extra Prime Washed). and PW (Prime Washed).
