This coffee offers a beautifully balanced flavor profile where "wild. robust body" and "refined. clean acidity" coexist in harmony. The moment you take a sip. a bright. refreshing acidity reminiscent of ripe oranges and apricots spreads across your palate. Supporting this are the savory notes of roasted nuts and caramel—characteristic of East Timor coffee—along with a gentle. earthy bitterness that provides a solid foundation.
A standout feature is the clear. sweet finish. A rich sweetness akin to muscovado sugar or honey lingers on the palate. and the sweetness becomes even more pronounced as the coffee cools—a truly captivating quality.

<About the Beans>
Coffee cultivation in East Timor has a long history. dating back some 200 years. However. political instability caused by colonial rule and military occupation made it difficult to share the appeal of this region's coffee with the world. The NGO Peace Winds Japan. which began providing aid during the turbulent period following independence. launched a coffee development project to offer sustainable livelihood support. East Timor is a unique country where organic farming is so widespread that the entire nation could be described as "organic." Despite its long history of coffee cultivation. the practice of using pesticides or chemical fertilizers simply does not exist there; both coffee and other crops are grown entirely without reliance on such chemicals. ??Origin??
